Job Description:
Reporting to the General Manager, as Catering/Food & Beverage Service Manager at The Hollis Halifax – a DoubleTree Suites by Hilton you will be responsible for managing repeat and new catering business, ensuring that revenues are maximized for meeting space, the “Wake Up DoubleTree” breakfast buffet program and lobby bar, achieving brand and property standards and goals. You will also be responsible for the management and delivery of the food and beverage service by developing a team of service oriented employees.

• Provide leadership for the Food & Beverage team and leading by example
• Responsible for hiring, training, scheduling and performance management of F&B employees of hotel
• Focus on consistent delivery of Hilton’s Vision, Mission, and Values by all team members
• Promote hotel policies and procedures;  support internal networks i.e. Health & Safety
• General administrative duties:  scheduling, ordering, inventories, beverage cost control, food cost control, labour cost control
• Hiring, training, coaching and disciplinary responsibilities
• Assist with menu design and implementation
• Ensure all financial reporting, billing and payroll entry is maintained and accurate
• Responsible for the daily operation of the Hotel Lobby Bar
• Achieve Hotel Lobby Bar revenue and profit goals by developing and implementing strategies to increase Bar revenue and control costs, providing forecasting of revenue and expense on a monthly basis
• Coordinate and finalize all meetings and functions with attention to detail pertaining to each booking
• Book meetings, banquet, social events and group bookings
• Show banquet rooms to prospective clients
• Work with function planners and other hotel personnel including third party food service provider confirming physical and financial arrangements to meet and exceed  expectation; banquet Event Order (BEO) details (F&B, AV, Room Set Up) while maximizing revenue
• Prepare daily banquet invoices for the department; handle the invoice payment compile summary invoice sheets
• Update and distribute weekly event sheets
• Attend management meetings
• Answering guest inquiries in a timely and accurate manner
• Ensure the smooth and efficient operation of the F&B service
• Clear and concise pass-on communication with staff in the department
• Greeting and seating guests, taking food & beverage orders, providing menu suggestions and up-selling menu items whenever possible
• Maintaining cleanliness standards
• Settling checks with customers, receiving and processing payments
 
Job Requirements:
• Previous F&B Management is an asset
• Experienced in Bar and Banquet operations
• Must possess the skills to quickly, tactfully resolve and defuse guest and/or employee concerns and ensure the appropriate follow up is carried out
• Proven ability to effectively handle stressful situations, be receptive to change and increased demands
• Demonstrated ability to train, motivate and develop team members through own experience and passion for customer service
• High level of attention to detail
• Strong organization skills, ability to multi-task, prioritize and work in a fast paced environment
• Excellent written and verbal communication skills
• Multi-tasking proficiency
• Micros and OnQ experience an asset
• Must be able to work a variety of shifts inclusive of evenings, weekends and holidays.
