We are entering into exciting times as our current restaurant and lounge will be relocated so that it will be open to the lobby area of the hotel. With these renovations will come an opportunity to be involved at the re-conceptualization of our restaurant and lounge.
 
The Director of Food & Beverage is expected to maintain a profitable food & beverage department while maintaining high quality products and service and acting as a member of the Executive Committee. The departments are expected to achieve or exceed budgeted revenues, profit margins, food & beverage costs, and labor and expense percentages, and maximize Guest Service Index.
 
DUTIES & FUNCTIONS:
 
  • Hold pre-function meetings, and check staffing and menus prior to events.
  • Make sure all required equipment is available for events.
  • Oversees the Banquet, Outlet and Culinary departments.
  • Works closely with the Executive Chef in the drafting, designing and implementation of the menus and the Outlet and Banquet Managers in the implementation of the wine and bar lists.
  • Check appearance of all department employees to ensure compliance with NCHR Standards of Appearance, council when necessary
  • Perform and necessary follow up, including forecasting
  • Prepare the Food & Beverage budget and monitor department performance with respect to same
  • Ensure Department Managers manage all functions with associates including; interview, hire, schedule, train, develop, empower, coach & council, recommend and conduct check in meetings, resolve problems, provide open communications, recommend discipline & termination as appropriate
  • Monitor industry trends, take appropriate action to maintain competitive and profitable operations
  • Ensure that special promotions are created for the lounge and restaurant to enhance profitability
  • Monitor quality of service and food and beverage
  • Approve and implement training manuals to ensure service excellence and consistency
  • Ensure communication between and within departments including regularly department meetings
  • Lead by example and promotes a team-oriented culture.
  • Coordinate and monitor all phases of loss prevention in the Food & Beverage department
  • Ensure purchases of food and beverage items are within budget allocation
  • Ensure compliance with all local liquor laws, and health & sanitation regulations     
 
Rate of Pay: Commensurate with Experience
