Executive Chef

Reporting to the Director of Operations, and in accordance with hotel policies and procedures, the Executive Chef is responsible the maintenance of food quality, service, and cleanliness of the culinary areas for the creation of total customer satisfaction and profitability.  Responsibilities include, but are not limited to the following:


 
  • Develop menus including restaurant & banquet menus
  • Promotion of a team environment to achieve total guest satisfaction
  • Establish a team rapport, project a positive attitude, and lead by example to create superior guest satisfaction and an enjoyable work environment
  • Achievement of budgeted cost of sales through the effective management of food cost control procedures and the effective supervision of labour
  • Ensure all employees conform to government laws and regulations with respect to food handling/storage, liquor, health & safety and fire procedures.
  • Direct and monitor the daily preparation and production of food products for the hotel, including all F&B outlets.
  • Provide input and attend required meetings.
  • Maintain complete familiarity with new product trends, presentations, and production methods
  • Ensure strict compliance to all kitchen policies, standards and procedures
  • Effectively orientates, and trains kitchen employees to ensure strict compliance to all operating policies and procedures
  • Ensure that personal work schedule reflects peak business periods
  • Ensure all daily, weekly, and monthly cleaning procedures are adhered to
  • Committed to and encourages team to follow all Occupational Health and Safety requirements.
 
Perform administrative duties including, but not limited to, scheduling, BEO’s, payroll, temperature reports. Performs any other duties assigned or requested by management


 
  • Minimum 2 years Sous Chef or 3years Chef de Partie,
  • Excellent knowledge of Hot Line, Restaurant and Banquet production.
  • Excellent knowledge of kitchen safety standards and procedures
  • Excellent communication and organizational skills
  • Familiarity with Microsoft Office.
  • Eager to achieve and promote high standards
  • Strong leadership ability
  • Physically capable of lifting up to 30 lbs and standing for long periods of time
